Yassas, friends! Or hello, friends! I figured it was only appropriate to start off this recipe’s greeting in Greek since this one comes to you from my ancestors in the old country. Okay, so maybe my ancestors didn’t come up with this exact recipe since it’s vegan… their tzatziki probably had loads of Greek yogurt. But it’s still Greek!
Anyways, I’m very excited to share this recipe with you! Being Greek myself, I love when I am able to recreate and share traditional Greek dishes with a vegan twist. I would also love it if I still remembered most of my Greek from Greek school, but I digress…
I hope you love this creamy, delicious vegan tzatziki as much as I do! Let me know what spices you use.





Vegan Tzatziki
Ingredients
- 1 cup raw cashews, soaked overnight
- 2 small cucumbers
- 4 tbsp chickpea flour
- 4 tbsp lemon juice
- 2 tbsp olive oil
- 6 garlic cloves, minced
- 2 tsp dried mint, to taste
- 2 1/2 tsp dried dill, to taste
- 2 tbsp apple cider vinegar
- 1/2 tsp pepper
- 1/2 tsp salt
Instructions
- In a bowl, cover the cashews with water and soak overnight.
- Grate the cucumber, as is, into a bowl.
- Separate the water from the cucumber and the grated cucumber by using a strainer. Press the water out of the cucumber with a spoon.
- Place the cashews, lemon juice, cucumber juice, and olive oil into a high powered blender or food processor and blend until smooth.**
- In a small saucepan, mix the chickpea flower and 6 tbsp of water over medium heat until a thick roux forms.
- Add the roux to the blender and blend until smooth.
- Add garlic, mint, dill, apple cider vinegar, pepper, salt and grated cucumber, then blend until combined.
- Place in a sealed container in the fridge overnight for the best consistency and flavors.
- Enjoy with some Jackfruit Gyros!
Notes
*Chop the cashews if you don’t have a high powered blender or food processor.
*It also helps to add parts of the cashews at a time, blending in between, to get the desired consistency.
