Before I went vegan, there was nothing I loved more than a good glass of wine and cheese. A majority of my meals were probably cheese, crackers, and wine… I’m sorry body! While I’m still known to consume my fair share of wine, I obviously gave up my need for dairy cheese.
But with this almond cheese, I can once again enjoy my wine, crackers, and a healthier, more environmental-friendly “cheese”! JJ and I devour this recipe. We will often have it instead of a meal. It’s a new favorite to prepare for picnics to a local winery, park, or beach!
I love using chives, but I know this recipe would be good with other herbs too! Maybe one of these days I’ll experiment with another herb, but it the mean time, let me know what you guys try out!





Garlic and Herb Almond Cheese
Ingredients
- 1 cup raw almonds, soaked for 24 hrs
- 2 tbsp + 1 tsp lemon
- 2 tbsp nutritional yeast
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 cup chives (or another herb you wish to use)
Instructions
- In a small bowl, cover the almonds with water and let soak in the fridge for 24 hours.*
- Drain the almonds and place in a food processor with 1/2 cup water, lemon, nutritional yeast, olive oil, garlic powder, and salt.
- Process until smooth.
- Hand mix in your herb of choice.
- Place in an airtight container in the fridge for a few hours so the herb flavors can develop.*
- Enjoy with crackers, on a toasted bagel, or veggies!
Notes
*Soaking the almonds for 24 hours is crucial for processing them into a smooth “cheese”. Anything less and I’ve found my “cheese” to be chunky and not as enjoyable.
*I usually wait 3-4 hours for the flavors to fully develop.
