I go through nut milks so fast that I am constantly running to the store to buy non-dairy milk. So I love making my own nut milks, specifically cashew milk. It’s extremely easy to make and tastes delicious!
I love using it in my morning smoothies or with some freshly baked cookies. Yum!! Plus, people are always impressed when you say homemade cashew milk… “Debbie, try some of my homemade cashew milk with those cookies“. Doesn’t that just sound fancy!?

Ingredients
- 1 cup raw cashews, soaked overnight
- 2 medjool dates, pitted
- 3 1/2 cups of water
- 1 tsp vanilla extract
Instructions
- Place the cashews in a bowl and cover with water.
- Soak them for 24 hours preferably.
- Drain the cashews and add to a high powered blender with the remaining ingredients.
- Blend until completely smooth.
- Store in the fridge for 4 days in an air tight container.
- Enjoy with some cookies!
