I’ve been making these vegan peanut butter chocolate chip cookies since WAY before I was vegan, because they are so dang good. TRUST ME. I would make these to bring to work and place them by the coffee machine in the morning. Within no time at all, my coworkers would have stacks of them laying on their desks like cookie hoarders.
These cookies can be frustrating to make though so be patient! You MUST use a peanut butter that is not very liquidy, otherwise may the odds be ever in your favor…
I home-make a batch of my homemade peanut butter and make sure to leave it thick. These vegan peanut butter chocolate chip cookies are better when left sitting overnight. They become more moist and delicious! I usually use regular sugar, but for this batch I tried Coconut Palm Sugar, which is why they are extra brown. The flavor turns out great though either way!

Peanut Butter Chocolate Chip Cookies
Ingredients
- 1/2 cup + 2 tbsp non-dairy milk
- 2 tbsp ground flax seed meal
- 1/2 tsp apple cider vinegar
- 1/2 cup + 2 tbsp all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp salt
- 1 3/4 cups sugar
- 1 1/4 cups natural-style crunchy peanut butter*
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp maple syrup
- 1/2 cup semi-sweet chocolate chips
Instructions
- In a small bowl, whisk together the flax seed, non-dairy milk, and vinegar. Let thicken for 10 minutes.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In another medium bowl, mix the sugar, peanut butter, and coconut oil.
- To the peanut butter mixture, add the flax seed mixture with the syrup and vanilla extract and mix.
- Add flour mixture and stir until just combined.
- Fold in the chocolate chips.
- Place in the fridge for 15 min to bind the dough together.
- Preheat the oven to 350°F during this time.
- Use a spoon to make 1 1/2 inch balls and spread them out on cookie sheets.
- Bake for 17 min.*
- Enjoy with some homemade cashew milk!*
Notes
*Make sure you buy stiffer peanut butter. If the peanut butter is runny the cookies will flatten. I make my own thick peanut butter for cookies.
*Watch these cookies carefully as the peanut butter color makes it hard to tell if they are browning.
*These cookies are best when a day old.
