As promised, my Oregano Fries recipe! Were you waiting on the edge of your seat for this? Or was that just me?
It was probably just me because I love french fries. They are such a guilty pleasure of mine. I remember when I was new to being vegan and I would eat french fries for meals all the time when eating out…

But making my own fries gives me the comfort of knowing how they are made and that they aren’t as unhealthy for me! I can be impatient during the long bake time, but they are always worth it if I can wait long enough for them to get crispy.
So have patience! If you waited a week for these oregano fries, I think you can wait 45 mins to cook warm, crispy oregano fries. And while your baking them, you can prep ingredients and cook your Jackfruit Gyros. So it won’t really be like your waiting at all. It’s all about perspective!





Ingredients
- 3 large russet potatoes
- 3 tbsp olive oil
- 1 1/2 tsp salt
- 1 1/2 tsp oregano
Instructions
- Preheat oven to 400°F .
- Scrub potatoes until clean.
- Cut in thin matchsticks.*
- Place in a large bowl and toss with the olive oil and salt.
- Spread out on a baking tray and place in the oven.
- Cook for 45 mins, or until crispy, taking out and turning every 10-15 min.*
- For the last 5 mins, turn the oven on broil.
- Toss with oregano, and enjoy with Jackfruit Gyros and dip in a Vegan Tzatzizki sauce!
Notes
*The thinner the matchsticks the better, as they will cook faster and get crispier.
*Turning frequently will help the fries from sticking to the pan and browning on one side.
