Summer is coming! (Ughhh… that made me miss Game of Thrones.)
With summer comes vacations. WHOOP WHOOP! JJ and I are headed to Canada in 2 weeks! I really need to get my ish together for that trip. Do you guys have any fun summer trips coming up?
Other than that, I will be spending summer by heading to the beach, spending time with friends & family, sipping on cool drinks, and cooking fun recipes to bring wherever I’m headed.
The one thing I dread about summer though is if I feel like baking, it’s practically unbearable. When it’s 90°F in my brick house, the only thing I’m concerned with is staying cool. That’s why these chocolate peanut butter dat balls are perfect for summer—they’re frozen! Better yet, they are super easy to make and SO GOOD. Peanut butter AND dates AND chocolate… need I say more? Can’t wait for you all to try them!





Chocolate Peanut Butter Date Balls
Ingredients
- 15 medjool dates, pitted
- 2 1/2 tbsp peanut butter
- 3/4 cup non-dairy chocolate chips
- 1 tsp coconut oil
- Himalayan salt
Instructions
- Places the dates and peanut butter in the high powered food processor and process until smooth.*
- Form 25 balls with the date mixture about the size of a raspberry and place in the freezer for 10 mins.
- Melt the chocolate chips and coconut oil in a small saucepan. Remove from heat once almost all the chips have melted.
- Roll the balls in the chocolate using a fork and place on parchment paper covered plate.
- Shave or sprinkle Himalayan salt over the top of each ball.
- Place in the freezer for 20 mins.
- Enjoy fresh out the freezer or fridge.
Notes
*If your food processor isn’t high powered, soak the dates for 10 mins in water first. My food processor can barely just do the job without soaking.
