Ciao amici! (“Hello friends” in Italian… I definitely google translated that). This weekend JJ and I went horseback riding and wine tasting in Temecula! JJ bought this for me for my birthday back in March, and it was definitely worth the wait. Wine Country Trails took us on horseback through a vineyard. Anyone who know me knows horses + wine = a happy Kristen, so well done JJ!


I packed some homemade almond cheese, some crackers, and olives for a yummy picnic lunch to go with our wine tasting. After waking up early to make the drive out to Temecula and drinking wine in over 90°F weather, JJ and I were exhausted by the time we got home. But allllll I could think about was homemade pasta… so after a quick (2 hour) nap, I got to work. But it was worth the work and the wait.

Ingredients
- 2 3/4 cups of all-purpose flour
- 1 tsp salt
- 1 tsp tumeric
- 3/4 cup + 2 tsp water
- 1 tsp olive oil
Instructions
- Turn on some Italian music. This step is crucial!
- Whisk all the dry ingredients together in a bowl.
- Add 3/4 cup of water and olive oil. Use a wooden spoon and your hands to work the dough into a ball. It should not be sticky, add more flour if it is. Add more water, 1 tsp at a time, if it’s too dry. I usually use 2 tsp extra.
- Let the ball sit in a bowl or flat surface and cover with a clean towel for 20 mins.
- Cut the ball in about 4-5 pieces.
- If you have a pasta making machine, flatten the pieces into round ovals.
- Feed through the roller a few times, progressively making the pasta sheet thinner using the machines settings.**
- Once you are happy with the thickness, run it through the cutting side into desired size.
- If you don’t have a pasta machine, roll out each piece as thin as possible and use a knife to cut long thing noodle-strips.
- Hang dry the pasta pieces for about 15 min. You can also use a baking sheet as long as the pieces aren’t touching. This ensures they won’t stick together.
- Boil a big pot of water with some salt added.
- Once boiling add the pasta for 4 min, until desired consistency.
- Add desired pasta sauce and toppings, and enjoy!
Notes
*If the pasta dough starts to break apart, just you fold into a ball and re-flatten making sure there are no air pockets and run it through the machine again.
*I use setting 2, then jump to 4 – 6 until it’s the thickness I want. The pasta noodles taste better when they are thinner!
