‘Tis the season, to enjoy all the pumpkin spice this world has to offer. Usually I stick with my pumpkin pie recipe to get my pumpkin fix. But this year I’m feeling especially in the Fall/Winter mood.
I used my delicious Peanut Butter Banana Muffin recipe as the base, since it’s perfectly moist and always a crowd-pleaser, and adjusted the flavors away from banana towards pumpkin spice and everything nice.
These vegan pumpkin spice muffins have the perfect balance of pumpkin spice flavors and regular muffins, so technically… it doesn’t even need to be Fall or Winter to enjoy them! They’re very easy to make and are best after sitting overnight in a tupperware container. Trust me, and try them the next day. Enjoy with a cold glass of cashew milk or with your morning coffee on the go!





Vegan Pumpkin Spice Muffins
Ingredients
- 1/2 cup peanut butter (Homemade Peanut Butter)
- 1/2 cup brown sugar
- 3/4 cup non-dairy milk (Homemade Cashew Milk)
- 2 cups pumpkin puree (16oz)
- 1 tsp vanilla extract
- 2 cups whole wheat pastry flour or all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 1/4 tsp cinnamon
- 3/4 + 1/8 tsp powdered ginger
- 1 1/8 tsp nutmeg
- 3/4 + 1/8 tsp all spice
- 1/2 + 1/8 tsp ground clove
- 1/2 cup walnuts, chopped
- 1/3 cup vegan chocolate chips
Instructions
- Pre-heat oven to 375°F and grease a muffin pan with coconut oil.
- In a medium bowl, mix the brown sugar and peanut butter.
- Add the pumpkin, non-dairy milk, and vanilla extract to peanut butter mixture and stir until combined.
- In a large bowl, combine flour, baking powder, salt, cinnamon, ginger, nutmeg, all spice and clove.
- Add the wet mixture to the flour mixture and stir until just combined.
- Add the walnuts and chocolate chips and mix together.
- Scoop the batter into the greased muffin pan. Fill them to the brim with batter, until all the batter is used.
- Bake for 18 mins, until the muffins are just starting to brown.
- Place in a sealed container overnight for perfectly moist muffins! They are best when eaten within 3-4 days of baking.
